NUEVOS VINOS SINGULARES DE LA D.O. MONTILLAMORILES.<\/span><\/p>\n

[\/vc_column_text][vc_column_text css=”.vc_custom_1541671924035{margin-top: 0px !important;}”]El objetivo del proyecto es la obtenci\u00f3n de nuevos vinos blancos singulares, con uva Pedro Xim\u00e9nez en la zona de Montilla-Moriles, a partir de selecciones de cepas de distintas edades y zonas con caracter\u00edsticas, orientaci\u00f3n y altitud diferentes, para llevar a cabo una vinificaci\u00f3n de forma separada. Los nuevos vinos objeto de este proyecto, son importantes para la empresa y, sobre todo de cara al mercado de exportaci\u00f3n, ya que van a tener un mayor afinado, asegurando una buena clarificaci\u00f3n que se mantenga a lo largo de su vida \u00fatil, para evitar turbideces y adem\u00e1s se mejorar\u00e1 los posibles problemas de pardeamiento en los vinos blancos.<\/span>
\nPara obtener los nuevos vinos objeto de este proyecto se esta desarrollando una estrategia de producci\u00f3n que implica todas las etapas de producci\u00f3n de vino: desde la selecci\u00f3n de las parcelas, hasta la clarificaci\u00f3n y la estabilizaci\u00f3n de los caldos, pasando por la metodolog\u00eda de vinificaci\u00f3n (con piel, sin piel, con determinado grado alcoh\u00f3lico). En la fase de selecci\u00f3n se han seguido unos criterios para cada zona espec\u00edficos y posteriormente realizar vinificaciones separadas. Estas elaboraciones, se han llevado a cabo en dep\u00f3sitos de distintos materiales y capacidades, para obtener un primer vino que se ir\u00e1 mejorando en los a\u00f1os siguientes.<\/span>
\nActualmente se han obtenido unos vinos iniciales, que han resultado muy interesantes tanto en catas internas como en otras organizadas para ver su posible comercializaci\u00f3n, pero hay que esperar al final del proyecto para obtener los vinos definitivos.<\/span>[\/vc_column_text][\/vc_column][vc_column][\/vc_column][\/vc_row]<\/p>\n","protected":false},"excerpt":{"rendered":"
